People have designed a lot of new levels, improved levels, and bug-fixed levels for Nethack.  I've pre-compiled them all for the official DOS & Windows binaries.  If you're using the official release, you can mix and match sets of levels just by downloading data files.

You start by downloading two sets of data files.  These don't actually do anything; they just lay the groundwork.  (Well, they fix a few bugs in the original levels.)

Next, you download whatever sets of precompiled levels look interesting.  Again, these are data files, not programs.

Put the data files in your Nethack directory, and you're done.

(If you want, you can finish up by replacing particular levels you don't like with extra copies of better ones.)
