The first book in the series ‘A Gift of Chocolate’, Ray developed as a Christmas gift one year while pastry chef at Parksville’s renowned Tigh-Na-Mara Resort. It soon became a favorite amongst the staff, and he was encouraged to develop another book featuring desserts from the resort’s fresh sheet menu.
As the popularity of the small books spread, the repertoire was increased to include books about sea foods, chicken and vegetable cookery. Of course no such listing would be complete without that all time favorite North American dessert; Cheesecake.
Ray is working on a couple of other titles at present, which he will announce in the monthly newsletter as they become available.

Chef Pierre’s Fresh Sheet
Some time ago Ray teamed up with cartoonist Brian Fray to create the very funny fictional adventures of a couple of Brian’s cartoon characters. The setting is Vancouver Island and they attempt to convince the bank that they are capable of restoring the fortunes of a broken down Chinese restaurant by creating a French bistro.
