"Missing Patrick" was originally recorded as a demo for promotional purposes. The Penguins had been together for two months at the time of the recording. Recorded in a mere three hours in the friendly confines of Peter Barboluk's Acoustic Cafe, 15 tracks emerged from an initial 30 to make it to the final product. Missing Patrick features the four piece band, minus Patrick on flute (hence the name). The CD shows the heavy influence of the Bothy Band, with six tracks taken from the masters themselves. The front cover of the CD shows the Penguins in a state of impending frostbite at a cold September 1999 performance at the Saskatoon Farmer's Market. This was the first time the four piece band had performed live. They thawed out by christmas.

Live tracks from "Out On The Ocean" were recorded at Lydia's Pub in Saskatoon on Dec 28th 2000. Studio overdubs were done at the Acoustic Cafe under the careful scrutiny of producer Peter Barboluk. Mastering was performed at Gotham City Studios Vancouver by Craig Waddell. Special guests on the CD are Eileen Laverty who adds her silky vocals to "Go Lassie Go" and "Green Grow The Rashes"; and the enchanting Irish hard shoe dancing of "The Bantry Lasses" (Laurie Johnston and Ashley Boese.)Peter Barboluk adds a tasteful accordion part to "Green Grow The Rashes"
