Crispix and Peanuts
A quick one from Pat
Mix together 1 cup of peanuts (unsalted)
and one 350 g box of Crispix cereal.
Bring the following to a boil:
1 1/2 cup brown sugar
3/4 cup margarine (not melted)
1/3 cup white syrup
Pour over crispix and peanuts mixture and microwave
for 1 minute. Stir and repeat the 1 minute microwaving
2 more times, stirring between each time. After it cools,
put it in a container and break it up a bit, as it tends
to clump together a bit.

Chocolate Chip Muffins
Another good one from Pat
2 cup flour
1 cup sugar
3/4 cup margarine
Blend the above until crumbly with a pastry cutter.
Reserve 1/2 cup for topping later.
To the remaining mixture add the following:
1-1 1/3 c. buttermilk (or if you don't have
buttermilk you can add 2 tsp. lemon juice or
vinegar to same amount of milk)
1 unbeaten egg
1 tsp. baking soda
1 c. chocolate chips (mint chips are great too)
Sprinkle on topping reserved at the beginning on
each muffin, and bake at 375 F for 15-20 minutes.
Granola

3 1/2 cup coarse oatmeal
1 1/4 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup fine unsweetened coconut
Can also add 1 cup of almonds if desired.
Mix the following together until it is melted:
1/4 cup honey
1/4 cup oil
1/4 cup hot water
Coat the dry ingredients with the wet - put in
a roaster or large container and bake at 250 F
until browned. Keep checking about each half hour
and stir it, as it burns easily. Raisins can be
added while it is still warm. Doesn't need sweetening.

Oatmeal-Apple Bars
Can't recall where I picked this one up...
Ingredients:
3 tablespoons vegetable oil
1/2 cup firmly packed light brown sugar
1 4 ounce jar strained applesauce(baby food)
1 teaspoon vanilla extract
2 cups quick-cooking oats
1/2 cup raisins
1 tablespoon chopped walnuts
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
Instructions
Preheat oven to 325. Lightly coat an 8 inch square
baking pan with nonstick cooking spray. In a bowl,
combine oil, brown sugar, applesauce and vanilla
until blended. Add oats, raisans, walnuts, baking
powder and cinnamon. Mix until blended. Press
mixture firmly and evenly into prepared pan. Bake
until edges are golden brown, about 25 minutes. Cut
into 16 squares while hot; cool in pan. Sprinkle
with extra walnuts.

Apple Cake
I found this one last year on the internet...Yummy!
Ingredients
3 eggs
2 cups sugar
3 cups flour
1 teaspoon salt
1 cup oil
2 teaspoons vanilla
1 teaspoon soda
3 cups apples
(I use Red Delicious for this recipe)
Beat eggs, vanilla, and oil. Add sugar. Sift
flour, salt and soda then stir into egg mixture.
Add apples. Bake at 400 for 30-40 minutes.
(I melt chocolate for a topping and sprinkle
crushed walnuts :-)

Scones

Ingredients
8 oz of plain flour and 2.5 teaspoons
of baking powder or self raising flour
2 oz butter
1/2 teaspoon salt
3/4 cup of milk
Sift two cups of flour with baking powder and salt into
a mixing bowl on top of butter. Rub the butter into flour
lightly with the finger tips until the mixture resembles
bread crumbs. Make a well in the centre and pour in the
milk and mix with a round bladed knife to a soft dough.
Turn unto a lightly floured board and knead very lightly
until smooth (about 10 kneads). Roll out 1/2 inch thick,
cut into 2" circles and bake until golden brown. Serve
warm with cream and strawberry jam.
