Oatmeal Buttermilk Pancakes

This recipe is from a friend's mother, who made them for us one morning. At the time I didn't grasp how nice she was being to me. I wish I could say thank you now in person, but thanks, Connie.

  • 2 cups rolled oats
  • 2 cups buttermilk
  • 1/2 c. flour
  • 4 tbsp melted shortening (2 tsp will do for a low-fat recipe)
  • 3 beaten eggs (or 2)
  • 1 tsp soda
  • 1 tsp salt (or a little less)
  • 1 tsp baking powder (plus a little)
  • 2 tbsp sugar, or chop up an apple

Soak the rolled oats and buttermilk overnight. Add the other ingredients and mix. Use 1/4 - 1/2 c. per pancake. Cook on an oiled griddle that's not too hot or too cold, until they're done. But not burnt. So don't wander off and do something else or start reading a book while they're cooking, because it doesn't work, trust me.
