Broccoli with Horseradish

I've never tried this. It looks like a good way to make an innocent vegetable sinful, especially if you put in all the butter. If you skip the horseradish it might be a good way to persuade children to eat their broccoli, when other threats and bribes have failed. You could use low-fat mayonnaise and skip the butter for a marginally less calorific result, but if that's what you wanted, why not just dribble a little balsamic vinegar on the broccoli instead and feel entirely virtuous?

  • 1 bunch broccoli (about 1 lb.)
  • 1/4 c. chopped onion
  • 1-2 tbsp butter
  • 1/3 cup mayonnaise
  • 1 tbsp prepared Horseradish

Trim the ends of the broccoli stalks. Slice the stalkes into a 2-quart microwaveable container, keeping the florets aside. Add the onion and water to the sliced stalks in the casserole. Cover and microwave at high until it's just barely tender (start at 3 minutes and keep poking it until it feels right).

Stir in the reserved florets and keep microwaving until all the broccoli pieces are bright green (start at 2 minutes and keep testing it until it's done). Add the butter and toss until it's melted. Then add the mayonnaise and horseradish and toss until blended. Serve immediately.
