Barley
Jambalaya

- 1.5 tsp
dried oregano
- 1 tsp salt
- 1 tsp ground
black pepper
- 1 tsp dried
thyme
- 1/2 tsp
ground red pepper
- 2 bay leaves
- 1 tbsp
oil
- 1 c turkey
ham or turkey sausage, cut into little pieces
- 1.5 c chooped
onion
- 1 c sliced
celery
- 1 c chopped
green bell pepper
- 12 cloves
minced garlic
- 1 can diced
tomatoes
- 5 c water
or broth
- 2 c uncooked
barley
Preheat oven
to 350F. Mix the spices and set aside. Heat oil in a large ovenproof
saucepan or roasting pan on top of the stove. Add the man, onion,
celery, green pepper, and garlic. Mix well, and saute for 5 -
10 min, scraping the bottom of the pan occasionally. Add tomatoes,
with their juice, water, and barley. Bring to a boil. Add the
herb mixture; mix in; cover; reduce heat to simmer fo4 5 min.
Put the covered pan in the oven and cook for 30-40 min. Stir after
30 min. Don't eat the bay leaves.
