Agurke salad
Sliced cucumber salad

3 Cucumbers
1 cup vinegar
1/2 cup water
1/2 cup sugar
salt, pepper

Peel cucumbers and slice paper thin. Sprinkle with salt
and let stand 30 minutes. Squeeze cucumbers in your hand
so all juice goes away and place dry cucumber in a glass jar.
Mix vinegar with water and sugar, salt and pepper and pour over cucumber.
Let stand 3-4 hours. This is a very delicious salad with meat and
open sandwiches.

Varm kartoffelsalat
Hot potato salad

3 cups sliced cooked potatoes
1 large onion
3 tbs.. butter
1 tsp. salt
1/2 tsp. pepper
3 tbs.. vinegar
3 tbs.. water
1 tbs.. sugar

Heat butter and cook onion over slow heat. Add vinegar,
water, salt, pepper and sugar stirring constantly. Add diced
potatoes, simmer 5-10 minutes.

Kold kartoffelsalat
Cold potato salad

3 cups cubed cooked potatoes
1 cup mayonnaise
1 tbs.. chopped onion
pepper
1/2 cup cut celery
1/3 cup chopped pickles
1 tsp. salt
2 hard boiled eggs for topping

Place mayonnaise in bowl and add onion, salt, dash of pepper.
Mix well. Add celery, pickles and last potatoes, mix again.
Decorate bowl with slices of hardboiled eggs.

Brune kartofler
Glazed potatoes

15 small boiled potatoes
2 tbs. butter
1/4 cup granulated sugar
1 tbs. water

Melt butter in frying pan, add sugar and keep cooking until sugar
is golden brown. Be careful not to let the sugar get too dark.
Add water and potatoes. Keep turning with a spatula until the potatoes
are glazed and look absolutely irresistible.

Rød kål

Red cabbage
The easy way

1 can cranberry sauce
1 large red cabbage

Place cranberry sauce in pot. Slice red cabbage finely remove inner stalk and place in pot.
Bring to the a boil and let simmer until tender. Serve with pork roast and
numerous other danish meats.

Traditional Rød kål

3 lb.. red cabbage
1/4 cup butter
1/2 cup red currant juice, or currant jelly
1 cubed apple
1/4 cup sugar
2 tbs. vinegar
1 tsp. salt

Wash head, quarter and remove inner stalk. Slice finely and sprinkle
with vinegar to avoid cabbage to turn color. Melt butter in a pot, larger
than you think you will need. Add sugar and salt and cabbage. Let simmer for
15 minutes. Add rest of ingredients and let simmer until tender. About two hours.

Flækkede asier
Split cucumbers

1 doz. medium sized asier
salt
10 shallot onions
10 bay leaves
10 spanish pepper
125 gram yellow mustard
100 gram white pepper
50 gram powdered horse radish
1 liter vinegar
550 gram granulated sugar
Peel and cut the cucumber lengthwise. Scrape the seeds out,
sprinkle with salt and leave for twenty-four hours.
Place squash in a clay or glass pot in layers with
the mixed spices in between. dissolve the sugar in
the vinegar and pour over the cucumber. Put a heavy
object like a water filled pot on top to press the
cucumber under the vinegar.

Grønne tomater
Green tomatoes

Wash tomatoes and split them in half. sprinkle generously with salt.
Let stand for twenty-four hours. Remove tomatoes and dry in a linen
cloth. For each kg. tomatoes, use 1/2 liter vinegar, 1/2 kg granulated sugar
and a bit of vanilla. Bring vinegar, sugar and vanilla to a boil. add tomatoes
and continue to boil for five minutes. Pour into crocks, cover with wax paper
and tie closed with a string.

Grønlangkaal
Creamed kale

2 cups chopped kale
1 cup white sauce: MADE OF: 2 tbs.. butter
2 tbs.. flour
1 cup milk Salt
Pepper
 

Make white sauce by melting butter in pot. Add flour, salt and pepper.
Bring to a boil and let simmer for five minutes. Add chopped kale and
let simmer for another 25 minutes. Serve with brown potatoes.
