
2 lb. lean pork
1 large onion
2 slices white bread, soaked
2 eggs
1 tsp. salt
1/2 tsp. pepper
1/2 cup milk
Let lean pork go through meat chopped twice, or let the
butcher do it, like they do in Denmark. Add soaked bread,
grated onion, eggs, mix well with a wooden spoon. Add salt, pepper
and milk. Fry in margarine in a skillet.
Very delicious with creamed vegetables.

Veal birds
2 - 3 lb.. veal
Parsley
Salt
Pepper
Slice meat and flatten well. Roll meat around pieces
of parsley.
Wrap rolls with thread. to keep their shape.
Roll birds in flour that have been seasoned with salt
and pepper.
Brown in butter on frying pan and add water. Simmer
until done. Thicken the
juices with cornstarch and serve with boiled potatoes
and vegetables of your choice.

Roast pork loin
3 - 4 lb.. pork loin
Salt
Pepper
Wipe your loins with a damp cloth :-). Rub meat with
salt and pepper.
Brown meat in hot oven. Roast meat in a 325o oven
for approx. 2 hours. Add 1 - 2 cups boiling water
to pan while roasting.
Skim drippings for fat and thicken with cornstarch.
Enjoy with red cabbage and browned potatoes.
6 slices side pork
6 eggs
1/4 cup milk
Chives
Fry pork in frying pan. Drain the fat of. Beat eggs,
add milk and chopped chives
and pour into frying pan with the pork. Cook over
slow heat until done.
Serve with danish rye.
One skinned Ham
Brown sugar
Cloves
Place ham in roasting pan. Sprinkle with brown sugar
and stud with cloves.
Bake in 325o oven for 35 minutes until glazed.
Enjoy with your (I am sure excellent choice) of vegetables.

1 cup milk

Melt margarine in sauce pan, add flour, stir smooth.
Add milk slowly
stirring continuously over low heat. Let boil for
6 minutes and season with salt and pepper
Used with Spegesild. Use basic white gravy
Add 1 chopped onion to sauce. Cook until tender and
add salt, pepper
and 1 tbs.. butter.

Brown cabbage with pork
3 lb. pork, or more if it has bone in it. 2 - 3 white cabbages 2 tbs.. butter Salt Pepper The pork slices 1/2 inch thick. brown lightly on both sides on a hot dry frying pan. The cabbage slices into 1/2 inch thick slices. Brown the cabbage in the butter. Place the meat and cabbage in layers in a pot and let simmer for approximately 2 hours. Add salt and pepper to taste.
