Ris Ala Mande
1 1/2 cups milk
1/4 cup sugar
1/2 tsp. salt
2/3 cup minute rice
1 tsp. vanilla
1/4 cup blanched almonds
1/2 cup whipped cream
Bing cherry sauce

Boil milk, sugar, salt and minute rice uncovered for 8 minutes.
Fluff rice occasionally. Remove from heat; cover tightly.
Let stand 10 minutes. Add almonds and vanilla. Cover and chill.
Whip cream; fold into rice mixture. serve with sauce to 6.

Bing cherry sauce: Drain one can (17 oz.) pitted Bing cherries.
Add enough water to syrup to make 1 1/2 cups. Blend syrup, 2 tbs. cornstarch,
and a dash of salt. Cook and stir until thickened and clear.
Add cherries, one teaspoon of lemon juice, and if desired 1/2 tsp. almond extract.
In our family, we use canned cherry pie filling instead of the Bing cherry sauce.

Rød grød med fløde
Red fruit dessert with cream

1 lb. red currents
1 lb. raspberries
1 lb. black currants
3/4 cup cornstarch
blanched almonds
1 - 2 cups sugar

Rinse fruit and place in pot with cold water enough to cover berries.
Cook until fruit has no more color and place a cloth over a sieve and
pour juice and berries through. Squeeze all juice out of berries in cloth.
Pour juice into clean pot and bring to a boil with sugar. Mix cornstarch
with a little water and add to juice, stirring constantly. Let boil two minutes.
Remove from stove. 1 cinnamon stick may be added to berries when
they cook or 1/2 vanilla bean may be added after removed from stove.
When cold, ladle into individual plates, sprinkle with sugar and pour
cream on top to taste.

Jordbærgrød
Strawberry Pudding

 2 lb.. strawberries
1 cup sugar
1 qt water
1/2 cup cornstarch
1-2 vanilla bean

 Rinse strawberries and bring to boil. Add sugar, let simmer until berries
are tender. Mix cornstarch with a little water and add to mixture. Add vanilla.
Let boil a few minutes. Cool . Sprinkle with sugar and serve with cream

Kærnemælkskoldskål
Cold buttermilk dessert

1 qt. buttermilk
2 egg yolks
1-3 cup sugar
1 cup whipped cream
chopped blanched almonds

Beat egg yolks with sugar. Add buttermilk and chopped
almonds, mix until well blended. Serve with whipped
cream floating on top. Heavy cream may be added to buttermilk.

Mors æblekage
Mothers apple cake

 2 cups applesauce (thick)
1 1/2 cups crumbs
6 - 8 almond macaroons
1 glass sherry wine
1/4 cup butter
2 tbs.. sugar
Whipped cream for topping

Brown the crumbs with sugar and butter over slow heat, do not
burn. Cool. Place the macaroons in the bottom of a glass bowl
and pour sherry over to soften. Add one layer of apple sauce then
one layer of crumbs. Keep on alternating the layers until nothing is
left. Top with whipped cream and decorate with little dots of currant jelly.

Bagt æblekage
Baked Apple cake

2 cups applesauce (thick)
1 cup crumbs
1/3 cup melted butter
1/4 cup sugar
whipped cream for topping

Mix crumbs, sugar and melted butter. Grease baking dish
and cover bottom with crumb mixture. Add thick applesauce
and alternate layers of crumbs and applesauce. Finish off
with crumbs on top. Bake 35 - 45 minutes i 375 degrees oven.
Serve lukewarm with whipped cream.

Pandekager
Danish Pancakes

4 eggs
1 tbs.. Granulated sugar
1 cup flour
1 cup milk
1 tabs. melted butter
1/4 tsp. salt

Sift flour. Beat eggs and cream and add slowly to the flour. Add sugar and salt. Blend thoroughly. Let stand for half an hour. Fry very thin on buttered frying pan, flip until golden brown on both sides.
Sprinkle with granulated sugar and enjoy. You can also replace a tbs.. of the milk with beer.

It seem to make them more chrisp. I like to wrap liberate amount of ice cream and whipped
cream in the pancakes. It is sinful, but OOOOOOHHHH so good.
