5-Minute Chocolate
Bundt Cake
An excellent and simple recipe for a
very quick AND satisfyingly chocolatey yet very low and slow glycemic
(and low carb, too) CAKE!
Dry Ingredients:
1 Cup [50-60g] Wheat
Protein Isolate
1 Cup [110-115g] Ground Almonds or "Almond Flour"
1 ½ Tsp [7mL] Baking Powder
4 Pinches Salt
½ Cup [40g] Cocoa Powder, Unsweetened, Dark Euro -- sifted
6 Tbsp [60g] Erythritol

Wet Ingredients:
6 Tbsp [85g] chocolate chips, Bakers' Semi-Sweet
3 Tbsp [45mL] safflower oil --
or any neutral flavor oil
3 Tbsp [45mL] coconut oil -- or Keto Butta or plain MCT oil*
5 whole large [280-300mL] eggs {I use omega-3
eggs}
4 Tsp [20mL] liquid Sugar Twin {approx equivalent
= 5 Tbsp sugar}
3 Tbsp [45mL] pure Vanilla Extract
¼ Cup [60mL] Half-an-Half -- 10% MF Cream
* can use all neutral vegetable oil...
Directions:
Whisk dry ingredients together in a medium bowl. Melt oil and chocolate
chips together (do not boil), stirring til well-blended. Beat eggs,
liquid sweetener, vanilla and half-and-half til completely blended,
then beat in (drizzling) melted chocolate mixture. Pour egg mixture
into a well in the dry mixture and beat thoroughly til combined.
Cook about 4-5 minutes in a 1000W microwave,
using a silicon or other microwave-safe
bundt pan (knife or toothpick comes out clean).
Cool 5 minutes in the pan, then invert
onto a rack or heatproof plate to finish cooling.
