Pesto and Chicken with Roast Garlic Pizza

What you need:
1 basic pizza dough recipe (covers one 16 inch pan)
1 Jar (190 ml approx.) of your favorite Pesto sauce (or your own)
3-4 Chicken Breasts
400 grams Edam Cheese (sliced)
3 tbsp Olive Oil
4-5 Heads of Garlic

How to put it all together:
Slice tops off Garlic Heads
Warp in Tin Foil or place in open oven proof dish
Bake at 450 degrees for 45 minutes
Let cool slightly until comfortable to handle
Squeeze roasted Garlic
into a dish
Combine with Pesto and mix well (need only 2/3 of the pesto)
Cut Chicken Breasts into bite sized pieces
Sauté Chicken bits in Olive Oil until beginning to brown
Roll out pizza dough
Spread enough Garlic/Pesto sauce to cover pizza
Arrange Chicken pieces on dough
Cover with Cheese

Bake in 450 degree oven
Slice and serve

or home made pesto sauces.
Tomato Pesto works well in which case
you might want to use a tomato/chili
marinated chicken.
