Dear Ilona:
We have enjoyed our stay immensely. Everthing was beautiful down to the smallest detail - soft bed, softer pillows, crispy yummy snacks, bright flowers, etc. You are a wonderful cook! Thank you for the care and attention shown us. I will recommend your place to all those I know who will be coming this way.

Dear Ilona:
I still remember when I first asked you how far away from downtown Hemingway's was and you said a 5-6 minutes drive only. We where so blessed to stay away from all the hustle bustle and traffic during the busy summer time.We enjoyed so much the breeze off the ocean ,your beautiful place with the elegance and peace. Your food and presentation is a delight -the whole atmosphere a must see.
Thanks again, Jeanie and Jack

Dear Ilona:
Thank you so much for making our stay in Victoria even better. Ilona, we loved your delicious crepes and your bagels with cream cheese, smoked salmon and your hors d'ovres. Your gracious loving always made us feel as we were saying good bye to family. Charming is not adequate to describe Hemingway's.

Ilona:
What a great pleasure to meet you and stay in your beautiful house. We enjoyed your wonderful hospitality and your gracious manner a a host. The food was outstanding, a delight! We loved our elegant Honeymoon Suite, the Champagne, the flowers and the privacy after the stressful weeks back home. We were totally relaxed and enjoyed the fireplace and the sauna. We will be back soon!

Dear Ilona:
Thank you so much for your wonderful hospitality and your gracious manner as a hostess. Many clients from around the world will come as guests, but leave as friends. You made our stay so special with great information and delicious breakfasts. We enjoyed both so much and the fantastic atmosphere at Hemingway's.

The hospitality we received was wonderful. Our hostess, Ilona, if she has the time, can be engaged in delightful conversation about her friend's trips with Ernest Hemingway, from which this B&B gets its name. Ilona gives excellent tips about travelling the island as well as Victoria. The B&B is close to a pleasant walk along the ocean, to a marina, and to a bus stop, but a good walker might enjoy walking into town. The walk will take them past a replica of Anne Hathaway's house, the delightful English Inn & Resort, formerly the Olde English Inn, and delightful homes with beautiful gardens. The weather is usually within a comfortable range year round, so the walk along the ocean could be enjoyed most days of the year by anyone who truly enjoys the outdoors in any kind of weather.

We called at the last minute and were cheerfully accomodated. Ilona gave us great advice on the best beach hikes on the drive north to explore the coastline. The home is fascinating, full of wonderful things collected from all over the world. The international couples we met there in the evening were enjoyable. Ilona's breakfast was so much more than we had expected, or ever received at any other B&B. Breakfast alone would be a great reason to stay at Hemmingway's by the Sea. We left feeling like family and will definitely return there to stay on our next visit. SC, California |
Dear ilona and Hemingway Team:
We will return! Richards folks enjoyed their stay as we did too. You are a gracious hostess and gave us such excellent advice for our vacation. We enjoyed everything here. Our room was so cozy and clean. We slept so good and quiet. We woke up and got an outstanding breakfast everyday. In your house is atmosphere and a great spirit.

A Special Recipe from Ilona:
The recipes below are a gift to you from me. I am very sorry that I could not give them to you in person so I put them on my web site. If you stay at my B&B, I have lots more to give you.
German Red Cabbage:
Purchase 2 jars of Red Cabbage or 1-2 heads of Red Cabbage
Slice the cabbage into small pieces (like sliced onions)
Place 2 tablespoons of mazola oil into a big pot and add a large onion sliced and simmer the onion until it is clear, then add the cabbage, 6-8 slices of good quality bacon (sliced into small pieces), 2 tablespoons of brown sugar, 6 apples sliced into small pieces (or use apple sauce), 2 tablespoons of white vinegar, sea salt and black crushed pepper to taste, and six bay leaves. Simmer for about 45-55 minutes. Bon appetite.
German Sauerkraut
(Ideal for your barbeque - year round)
Purchase 2 cans of good sauerkraut (Hengstenberg or Mildessa Sauerkraut)
Place 2 tablespoons of mazola oil into a big pot and add a large onion sliced and simmer the onion until it is clear, add 6-8 slices of good quality bacon (sliced into small pieces), 2 tablespoons of brown sugar, 1 can of crushed pineapple (or use apple sauce), sea salt and black crushed pepper to taste, and six bay leaves. Also add up to one bottle of light beer, with the exception the few sips taken while cooking. Add the beer slowly as the sauerkraut cooks as this will give you time for a few more sips. Simmer for approximate 60-70 minutes.

What to Bring to Victoria:
Victoria, on the southern tip of Vancouver Island boasts Canada's mildest climate. This area is the sunniest spot in the province and the gentlest in Canada in terms of climate, environment, and lifestyle. There is an average of 2,183 hours of sunshine and 26.2 inches of rain per year.
Our summers are warm, dry and sunny during the day with sometimes a slight breeze so even when exerting energy you are comfortable. We do suggest packing a sweater and light windbreaker for cooler summer evenings. Temperatures seldom exceed 75°F or 24°C.
In the winter (Nov - Feb) remember your rain gear and warm sweaters. We will provide the umbrellas. If you are planning more adventurous excursions, we suggest bringing appropriate gear including rainproof jackets, hiking boots, binoculars, camera, day pack, swimsuit, water bottle, etc.
