Spice's - Rubs

& Seasonings

THE COLONEL'S CHICKEN SPICES

1       tbsp    Rosemary
1       tbsp    Oregano leaves
1       tbsp    Powdered sage
1       tsp      Powdered ginger
1       tsp      Marjoram
1 ½   tsps   Thyme
3       tbsp   Packed brown sugar
3       tbsp   Dry minced parsley
1       tsp      Pepper
1       tbsp    Paprika
2       tbsp   Garlic salt
2       tbsp   Onion salt
2       tbsp  chicken bouillon powder
1       pkg. Lipton tomato cup-a-soup mix
 
Place all ingredients in blender to crush till powder consistency.  Store in an airtight container.  Makes  about  3/4 cup.
 
To coat chicken pieces, use 1 cup flour to 1 oz. spice mix.
 

ALMOST COLONEL'S CHICKEN SPICES # 2

Here is another version of The Colonel's Chicken Spices
3 cups sifted flour
1 teaspoon paprika
2 teaspoon garlic salt
2 teaspoons onion salt
1 teaspoon dried oregano
1 teaspoon dried rubbed sage
1/2 teaspoon dried powdered rosemary
1/2 teaspoon dried powdered thyme
1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon ground black pepper
 
Combine all ingredients. 
Makes 31/2 cups of seasoned flour 
HINT:  Double coat for extra crispy chicken.
 
 

EMERIL'S  ESSENCE  CREOLE  SEASONING

(ALSO KNOWN AS BAYOU BLAST)

 

2 ½ tbsp paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme
 
 Combine all ingredients thoroughly.  Makes  2/3 cup.

     EMERIL'S  SOUTHWEST  SEASONING

 
2 tbsp chili powder
2 tsps ground cumin
2 tbsp paprika
1 tsp black pepper
1 tbsp ground coriander
1 tsp cayenne pepper
1 tbsp garlic powder
1 tsp crushed red pepper
1 tbsp salt
1 tbsp dried oregano
 
Combine all ingredients thoroughly.  Makes  ½ cup.

RUSTIC RUB

 
8 tbsp paprika
3 tbsp cayenne
5 tbsp freshly ground black pepper
6 tbsp garlic powder
3 tbsp onion powder
6 tbsp salt
2 ½ tbsp dried oregano
2 ½ tbsp dried thyme
 
Combine all ingredients and store in an air-tight container.

SALT  SUBSTITUTE

 
1 tbsp dry mustard
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp paprika
1 ½ tsp pepper or cayenne
1 tsp basil
1 tsp thyme
 
Combine ingredients well.  Put in a salt shaker & use in place of salt to flavour foods.
 
 

TACO SEASONING MIX

1 tsp. cornstarch 
1 T. minced onion 
1 tsp. onion powder 
1 tsp. garlic powder 
2 tsp. chili powder 
1/4 red pepper 
1/8 tsp. cayenne pepper 
1 T. cumin 
1 T. paprika 
1/2 tsp. oregano 
1 tsp. salt
Directions:
Mix seasoning ingredients together and store in an airtight container until ready to use.  Two tablespoons of taco seasoning mix equal about the same as a store bought package.
