Bunwiches

Western Sandwiches

2 tablespoons oil
 1/4 cup finely chopped green pepper 
1/3 cup finely chopped onion
3/4 cup chopped cooked ham
6 large eggs
3/4 cup milk 
3/4 teaspoon salt 
dash pepper 
 
6 slices toast, buttered
 
Melt oil in a skillet. 
Saute the green peppers & onion until tender.
In a bowl, beat the eggs & milk together & add to the skillet.
Mix all thoroughly.  
Cook eggs on one side, turn & cook eggs on the other side. Salt & pepper the mixture.
Put the cooked mixture evenly on the 4 slices of toast.  Cut in haves or quarters & serve.
Serves 4 
 
 

Sylvia's Bunwich

hi! I came up with a recipe for breakfast bunwiches. At work we have our break at 10 a.m. it's really hard to eat a burger and fries at that time of day, so I came up with this recipe:
 I use my bread maker for the dough, but you can use your own bun recipe.
 
Filling:
6 eggs beaten
salt and pepper to taste
6 Tbsps. milk
1/4 cup chopped broccoli
1/4 cup diced tomato
1 tbsp chopped onion
1/4 cup shredded chedder cheese.
 
In a hot pan (I use pam veg. spray in place of  butter/ marg.) add egg mixture and mix to scramble.  Let cool.
To assemble take piece of dough and stretch and pat down, add 1tbsp. of mixture, wrap dough up and round the filling to make a bun. let rise until double. Bake at 350 degrees for 15-20 minutes or until olden brown. Makes 12 bunwiches.
 
I hope you will try this. I just pop one in the microwave at work for about 30 seconds and I have my breakfast. I usually take some tater tots and deep fry them at work, they make a great accompiment.

PARTY SANDWICH LOAF

Unsliced sandwich loaf of bread
2  (3) oz pkg cream cheese (softened with milk)
chopped parsley or pimento stuffed olives (for garnish)
 
HAM FILLING:
1 cup ground cooked ham
2 tbsp pickle relish, drained
1/2 tsp horse radish
1/3 cup finely chopped celery
1/4 cup mayonnaise
 
ASPARAGUS TIP FILLING:
1 can asparagus tips, drained
cheese whiz
 
EGG FILLING:
4 hard boiled eggs, chopped
2 tbsp finely chopped green onions
1/2 tsp prepared mustard
1/4 cup mayonnaise
salt & pepper to taste
 
Trim crusts from bread and slice length-wise in four equal layers. Butter each slice.
Spread first layer with ham filling, second layer with asparagus filling, and third layer with egg filling.
Beat cream cheese with milk till fluffy. Frost top & sides of loaf. Sprinkle generously with chopped parsley or sliced stuffed olives.
Wrap the loaf loosely in foil and store in refrigerator till serving time.
(EXCELLENT FOR PARTIES)
 

WILLA'S BUNWICHES

 
1 lb. Hamburger, browned & drained
1 med grated onion
1/2 cup green olives, chopped
2 cups sliced mushrooms, chopped
1/4 tsp garlic powder
1 tsp oregano
1 (14 oz) can tomato sauce
Cook the above ingredients together until thick.
 
3/4 lb. Ground cheddar cheese
Add the cheddar cheese to the hamburger mixture & stir till cheese is melted
 
Hamburger buns (cut in half) & buttered
Mozzarella cheese slices
 
Spread the 1/2 hamburger buns with a generous amount of the hamburger mixture,
top with 1/4 slice of mozzarella cheese. Put under the broiler until the cheese is
melted. Serve hot.
 
The hamburger mixture freezes very well, make a double or triple batch for
quick & easy snack.

HAM & CHEESE BUNWICH

 

Hamburger buns (cut in half)
butter
cheddar cheese slices or cheese whiz or grated cheese
shaved ham
 
Butter hamburger buns,  spread with cheese whiz, & top with shaved ham or put shaved ham on the bun & top with a cheese slice or  put shaved ham on the bun & top with grated cheese.
Bake in a 400 degree F. oven till the cheese is melted.
 
These are fast & easy.

 

BOWKNOTS

 
1 loaf fresh sandwich bread (white or whole wheat), thinly sliced
1 can cream of mushroom soup, undiluted
12 bacon strips, uncooked, cut in half
24 toothpicks
 
Trim all crust off bread. Spread soup on one side of bread slices, being careful to cover edges. Roll each slice from one corner to opposite corner.
 
Wrap bacon strip around middle of each roll and secure with toothpick.
 
Place on cookie sheet and bake in 250 degrees. oven for 1 hour. The
bowknots will be dry, crisp and delicious.
 
Note: Prepared bowknots may be frozen before baking. Place on a flat pan; when frozen solid, transfer to freezer bags. Bake without thawing, extending baking time about 15 minutes. Other condensed soups such as cream of asparagus or chicken can be substituted for the mushroom soup. Makes 2 dozen appetizers.
 
 

PARMESAN TRIANGLES

 
Bread slices
Butter or Margarine
Parmesan cheese, grated
 
Remove the crust from the bread slices, lightly butter 1 side of the bread, sprinkle generously with grated Parmesan cheese. Cut bread  into 4 squares, then these four into triangles. Place on a lightly  greased cookie sheet and bake at 350 degrees F. for about 10 - 15 minutes or until delicately browned. (Can be served hot or cold)

 

CHEESE PUFFS

 
8 slices white bread
2 cups milk
8 oz cheese slices
1/2 tsp. Pepper
1/4 cup butter, melted
1 tsp salt
3 eggs
 
Preparation: May be prepared the day before. At least 4 hours before cooking, trim crusts and cut bread into 1" squares. Cut cheese into bite size pieces. In large greased casserole, alternate layers of bread and cheese. Pour melted butter over top. Beat eggs well, stir in salt, pepper, mustard and milk. Combine thoroughly.
 
Pour over casserole. Cover and refrigerate. Bake in a 350 degree F.  for 30 minutes covered, then 30 minutes uncovered until top is golden  and puffy. Makes 4 servings.

 

BAKED BREAD CUPS

 
12 slices bread, crusts removed
melted butter
 
Roll slices of bread to flatten. Brush with melted butter. Press one  slice of bread into each cavity of a muffin pan. Bake at 400 degrees F.  for 5 minutes or until just golden.
Makes 12 bread cups

 

BABY PIZZA

1 tin tomato soup
3/4 tsp oregano
shake of garlic salt
 
1 lb bacon, chopped
1 large onion, chopped
 
12 oz cheddar cheese, grated
1 & 1/2 cup chopped salami
fresh mushrooms, sliced, optional
green peppers, chopped, optional
 
hamburger buns, halved
butter or margarine
 
STEP 1: Combine tomato soup, oregano & garlic salt together
& heat, stirring to mix flavours. Cool.
 
STEP 2: Fry the bacon & onion. Drain & cool. Keep in refrigerated till  ready to assemble pizza's.
 
STEP 3: Lightly butter hamburger buns, spread with the tomato mixture,  then sprinkle with grated cheese. Top with salami, chopped green peppers, & bacon/onion mixture, green pepper (or any other combinations that you  dream up), top with a bit more cheese & broil in oven till cheese melts.
 
 
HINT:  Having a party or tea?  Make fancy sandwiches,  butter the bread & spread on the filling, now cut the sandwiches with fancy cookie cutters.
