CONDENSED  MILK

 
1/4 cup butter
1 cup boiling water
2 cups white sugar
Beat until smooth then add
 
4 cups skim milk powder
pinch of salt
 
Beat until thick, add salt.  Use in recipes that call for Condensed Milk.  Will keep in fridge for up to 3 weeks or can be frozen.

 

HOMEMADE  BAKING  POWDER

 (single acting)

 
 
2 tsp cream of tartar
1 tsp baking soda
 
 Mix together and use immediately.  If you want to mix ahead of time and store no longer
than one month, add 1 measure cornstarch.
 
 Note: Use tsps to measure amount, but it really depends on how much you need.  The cornstarch will help keep the other ingredients from absorbing moisture (this is what is used in manufactured baking powder).  If you have a  recipe that calls for double acting baking powder, just use twice the amount.

 

SEASONED FLOUR

 
2 cups flour
1 to2 tbsp salt
1 tbsp celery salt
1 tbsp pepper
2 tbsp dry mustard
4 tbsp paprika
2 tbsp garlic salt
1 tsp ginger
½ tsp thyme
½ tsp basil
½ tsp oregano
 
Mix all together & store in a dry container.   Can be used to flour & season any meat.

 

SHAKE IT & BAKE IT COATING MIX

2 cups flour
1 tbsp celery salt
2 tbsp salt
1 tbsp pepper
2 tbsp dry mustard
4 tbsp paprika
2 tbsp garlic salt
3 tbsp Accent
½ tsp basil
1 tsp ginger
½ tsp thyme
½ tsp oregano
 
This is a multi-purpose coating.  Use for chicken, game, beef, stews or use as a marinade.

 

 

CORN  MEAL CRISP MIX

 
1 cup flour
1/3 cup corn meal
1 tsp salt
1/2 tsp garlic powder
1/4 tsps celery seed powder
1/4 tsp black pepper
1 tsp paprika
1/4 tsp sage
 
 Mix all coating ingredients in a plastic bag. 
 
To coat chicken wings, shake a few wings at a time in  the bag to coat with the corn meal mixture.  Put the wings on a lightly greased baking sheet & bake in a preheated 425 degree F.  Oven for about 40 to 50 minutes or until wings are crisp & golden brown.

 

SALT  SUBSTITUTE

 

1 tbsp dry mustard
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp paprika
1 ½ tsp pepper or cayenne
1 tsp basil
1 tsp thyme
 
Combine ingredients well.  Put in a salt shaker & use in place of salt to flavour foods.
