BABY PIZZA

 
1 tin tomato soup
3/4 tsp oregano
shake of garlic salt
 
1 lb bacon, chopped
1 large onion, chopped 
 
12 oz cheddar cheese, grated 
1& 1/2 cup chopped salami
fresh mushrooms, sliced, optional
green peppers, chopped, optional
 
hamburger buns, halved
butter or margarine
 
STEP 1: Combine tomato soup, oregano & garlic salt together & heat, stirring to mix flavours.  Cool.
STEP 2: Fry the bacon & onion. Drain & cool.  Keep in refrigerated till ready to assemble pizza's.  
STEP 3:  Lightly butter hamburger buns, spread with the tomato mixture, then sprinkle with grated cheese.   Top with salami, chopped green peppers, & bacon/onion mixture, green pepper (or any other combinations that you dream up), top with a bit more cheese & broil in oven till cheese melts
 
 
 

HOMEMADE TORTILLA CHIPS

Heat a 1/2 inch oil in a large skillet. Stack tortillas and cut into 6 pieces with 3 cuts of a knife. Carefully place tortilla pieces into oil and fry until they puff. Remove from oil and let drain on paper towels. Preheat oven to 400 degrees. Brush whole tortillas with oil and cut into chips. 
Place on baking sheet and bake in oven for 5 minutes. Flip tortillas and bake for 5 more minutes. Cool and store in airtight container. 
Makes 36 chips
 
 

OVER THE TOP NACHOS

 
1 pound ground beef
1 small onion, diced
salt and pepper to taste
2  (8) oz packages shredded Cheddar &Monterey Jack cheese
1  (16) oz can refried beans
1  (14.50 oz package tortilla chips
green onions, chopped
1 tomato, chopped & seeds removed
 
In a large frying pan, brown ground beef with onion, salt and pepper over medium heat. Break the meat into very small pieces while it is cooking. 
After the meat is thoroughly cooked, drain off the grease.
Arrange chips on a microwavable platter. Spread beans over the chips. 
Layer with 1/2 of the cheese, the ground beef mixture, and remaining cheese.
Microwave on medium-high until cheese has melted. Sprinkle with the chopped green onions & tomato. Serve immediately. Serve with sour cream,  salsa, and guacamole.  
Makes 6 servings
 
 
NUTS & BOLTS
 
1 1/2 cups Cheerios
1 1/2 cups Wheat Chex
1 1/2 cups Rice Chex
1 cup salted peanuts 
 
Melt: 1/3 cup margarine 
 
Stir in: 1 tsp. each garlic, onion and celery salt
3 tsp. Worcestershire sauce 
Pour over cereal mixture and mix well. Bake in shallow pan at 250 degrees for 1 hour. Stir every 15 minutes. cool before serving, store in airtight container.
 
 

SPICED NUTS

 
1 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ground cloves
2 tbsp butter
1/4 tsp nutmeg
1 tsp vanilla
2 tbsp water
1 cup pecans, cashews, walnuts, or mixture -- toasted
 
Combine sugar, salt, cinnamon, cloves, nutmeg, butter, vanilla and water in saucepan. Cook stirring constantly, until a small amount dropped into cold water forms a soft ball. Stir in toasted nuts. Remove from heat and stir until no longer glossy. Pour into buttered baking sheet and spread thinly. Cool, and break into pieces.
