Meatless ‘meat’ balls

Patties:   
6 beaten eggs
1 cup bread crumbs
1 cup grated cheddar cheese
1 cup fine grated nuts
1 small onion, finely chopped
salt to taste
1/3 cup milk

Topping:
3 large onions
(sliced into rings)
1 cup sliced mushrooms (optional)
1 can tomatoes or tomato sauce
(diced works best)
3 bay leaves


Directions: Combine all the ingredients for the “patties” into a large bowl and mix.

Form into patties or drops, and fry in a skillet with 2 tbsps oil or margarine. When brown on one side, turn and brown on the other side. Remove to a casserole dish. Repeat until all the mixture is used up.

Fry the 3 large onions and mushrooms. Add the tomatoes or sauce and season to taste. Pour over the patties in the casserole dish and put in 3 bay leaves. Bake in an 350° oven for ˝ hour.

Serve with rice or potatoes, vegetables, salad and no one will know that they are not eating regular meatballs.

Leftovers make a very tasty cold “burger” for lunch.
