Your best bet is to stick with the carriers listed in the first part of the table.  These are the airlines whose flights count towards your AAdvantage elite status and bonuses.  You need at least four AA/American Eagle flights as one of the requirements for elite status.  Just keep oneworld in mind and there should be lots of possibilites for earning Q-miles.

What's up with codeshares?

AA codeshares usually count as Q-miles as if they were earned on AA metal.  This is especially important for the non-status, non-Q airlines listed in the second part of the table above.  For those non-Q airlines, fares booked on those airlines flight numbers will earn you miles, but these miles do not count toward elite status and you won't get your elite status bonus either.  Booking on the same flights using AA codeshare numbers, however, will earn you Q-miles and elite status bonus miles as if you were flying AA metal.

American Airlines - Fare classes

Below is a list of AA fare codes sorted by booking code. ITN lists AA fare codes for economy class in this order: Y, B, H, K, M, V, Q, S, N, L, O

"Non-published" fares (usually these are in O, S, or W class) do not earn miles.  These are usually some kind of consolidator fares.

This table is slightly newer info and is from a more "official" source.  Something interesting I noted are the upgrade classes X and R.  Notice also the booking class "9": It's the first time I've seen a numeric booking class instead of a letter and it looks like it's to be used for upgrades from discount economy fares.  Warning! This table suggests that R and X class upgrades should give you 100% Q-points, but experience suggests this is not the case and is in keeping with AA's stated policy that upgrades earn you miles and Q-points based on your original fare.

Upgrading with a VIPOW or VIP2 sometimes gets you more miles and/or Q-points than your original fare.  This is not consistent.
