Hydration Calculator

The calculator computes the additions needed to attain a specific hydration level and amount of dough based on your goal and pre-ferment(s). You enter info into any two fields of the "GOAL", "1st pre-ferment:", and "2nd pre-ferment:" sections and the program will calculate what you need to add.

For example. Say you have 400 grams of a 100% hydration pre-ferment and you want to use it to create 1000 grams of 75% hydration dough. You would enter 1000 in the "total" field in the "GOAL" section and 75 in the "hydration" field. Then you would enter 400 in the "total" field of the "1st pre-ferment" section and 100 in the "hydration" field. Click on the "Computute Post-Ferment Additions" button and the program will tell you that you need to add 371.4 grams of flour and 228.6 grams of water to attain your goal of 1000 grams of 75% hydration dough. (We left the accuracy to several decimal points rather than deciding on a round-off scheme.)

I find this program very useful. It can do a lot more than described above, sometimes with just a little thinking and some minor calculations on your own. Any two fields will give you the results, so you could have used amounts of flour or water instead of hydration or total weight, or any combination of two of these four fields in each section. Blank fields default to zero and the program prioritizes from the top down, meaning that if you enter weight and hydration and flour or water, the flour or water entries will be discarded.

Unfortunately changing an entry after you've entered something is a little awkward, you have to change both grams and oz. Sometimes it's easiest to just start over. To clear all the fields reload the page.
