Swedish Pancakes
Overlap these tender 3-inch pancakes in a circle and top with lingonberry preserves to serve in the traditional Swedish way.
Prepare French Pancake batter following recipe but increase to 3 eggs.
Preheat frypan or griddle and brush with butter.
Pour 1 tablespoon of batter onto preheated griddle to form a 3-inch pancake. When edges become dry, turn and brown other side. Arrange 8 to 10 pancakes in an overlapping circle on an individual plate.
OR
Preheat a Swedish sectioned pancake pan and brush with butter. Use 1 tablespoon of batter for each depression. When edges becaome dry, turn and brown other side.
Top with lingonberries or other fruit preserve, and whipped cream.
Makes 6 servings.
