Sugar Bottom Coffee Cake
Yield:- 8x8x2-Inch cake
Ingredients:-
2 cups Basic Baking Mix (do not pack)
1/4 cup brown sugar, firmly packed
1/4 cup chopped nuts
1 egg
1/2 cup milk (approximately)
1 teaspoon vanilla
1/4 cup margarine
2/3 cup brown sugar (firmly packed)
1/3 cup coconut (optional)
Directions:-
Blend the mix, 1/4 cup brown sugar and the nuts.
Break the egg into a measuring cup and pour milk to 3/4 cup mark. Add vanilla. Beat well with a fork.
Add to the dry mixture, stir until thoroughly blended.
Melt margarine in an 9x8x2 baking pan. Add the 2/3 cup brown sugar and the coconut (if using). Spread evenly over bottom of pan.
Drop dough by tablespoonfuls on top of sugar mixture.
Bake at 375ºF for about 30 minutes. Loosen cake from sides of pan with a spatula or knife. Remove from pan immediately by inverting on a platter.
Serve hot!!!!
