Quick Quick Fruit Cake

Yield:- 7x11 or 9-Inch Square Cake
Ingredients:-

2-1/2 cups Basic Formula Mix (do not pack)
2 cups seedless raisins
1 cup brown sugar (firmly packed)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon cloves
1 cup boiling water
1 cup chopped nuts
1 teaspoon vanilla
1 teaspoon lemon extract

Directions:-
Combine raisins, sugar, spices and water. Let stand 5 minutes. Add the mix. Stir until just blended.
Add nuts, vanilla and lemon extract. Stir until well blended.
Spread batter into a greased pan.
Bake at 375ºF about 45 minutes.
Cool wrap well and age at least two days before serving.
