Potato Dumplings

Instructions:-
The classic German dumpling arrived in Canada with early German settlers, who settled in the Maritimes in the 1700's.

Instructions:-
In a frypan, cook until crisp
3 slices side bacon
Remove from pan, crumble and set aside.

Cut into cubes, sufficient bread to give
1 cup bread cubes
Stir into remaining bacon fat in frypan and cook until golden. Mix with bacon.

Mix together:-
2 cups cold mashed potatoes
1 egg
1 tablespoon milk
1 teaspoon salt

Stir in
2 cups Basic Baking Mix.

Beat until combined.
Shape into valls with a spoonful of bread and bacon mixture in the center. Drop into hot stew or soup. Cover tightly and simmer for 20 minutes, without lifting the lid.
Serve immediately.
Makes 8 to 10 dumplings.
