Pineapple Fritters
Yield:- about 12 fritters
Ingredients:-
1 cup basic formula mix (do not pack)
1 egg, separated
1/2 teaspoon vanilla
1 cup crushed pineapple & juice
Directions:-
Beat egg white until stiff but not dry. Combine other ingredients, fold in egg whites.
Drop batter by tablespoon into a skillet containing abotu 1/4-inch hot melted shortening or oil. Fry over low to medium heat until golden brown. Turn fritter just once to brown other side.
While still warm dust with icing sugar.
