Individual Peach Coffee Cakes
Yield:- 12 medium coffee cakes (2-3/4 inches in diameter)
Ingredients:-
Cakes:-
2 cups Basic Formula mix (do not pack)
1 egg
1/3 cup sugar
1/3 cup milk
Topping:-
1/3 cup basic formula mix
1/3 cup brown sugar (packed)
1/2 teaspoon cinnamon
24 peach slices
nut halves or cherries (optional)
Directions:-
Beat egg in a bowl, stir in sugar and milk. Add the 2 cups of mix gradually. Beat until blended.
Grease muffin tins lightly with shortening (or use paper baking cups).
Fill half full.
Make topping by the combining the 1/3 cup of mix, brown sugar and cinnamon. Sprinkle about 1 tablespoon topping over each cake.
Place 2 peach slices on top of each cake, garnishing with cherry or nut if desired
Bake 1t 400ºF for about 30 minutes.
