German Coffee Kuchen
These may be served hot for breakfast or at afternoon tea.
Instructions:-
Preheat oven to 375ºF.
Grease 20 medium-sized muffin cups.
With a fork, blend together:-
3 cups Basic Baking Mix
2 cups lightly packed brown sugar
1/3 cup melted butter
Reserve one cup of this crumb mixture and set aside.
Stir into remainder-
2 teaspoons instant coffee powder
3/4 cup milk
1 egg
Mix only until moistened. Fill prepared muffin cups 2/3 full. Sprinkle with reserved crumbs. Bake in preheated oven for 20 to 25 minutes or until golden.
Makes 20 muffins.
