German Apple Pancakes

Pieces of fresh apple give flavour and texture to this "appelpannkocker".
Instructions:-
Preheat griddle or heavy frypan to 380ºF.
Grease lightly with shortening.

Combine;
1 egg
1 cup milk

Stir in;
1 cup Basic Baking Mix

Beat with beater or spoon. (Batter should be slightly lumpy).

Grate into batter;
2 apples, peeled and cored.

Pour 1/4 cup batter for each pancake onto preheated griddle. When edges are dry, turn and brown other side.
Serve with butter and syrup.

Makes 8 to 10 (5-inch) pancakes.
