Fiesta Fruit Loaf

Yield:- One 9x5x2-3/4-inch loaf

Ingredients:-
2 cups basic formula mix (do not pack)
1 cup all-purpose flour
3/4 package yeast
1/4 cup luke warm water
2/3 cup milk
2 tablespoons sugar
1 egg, beaten
1/2 cup raisins
1/3 cup chopped mixed peel
6 red maraschino cherries, sliced
1/3 cup chopped nuts
2 tablespoons grated orange peel

Directions:-
Combinr mix and all-purpose flourin a large bowl. Soften yeast in lukewarm water.
Scald milk, cool to lukewarm, add sugar then add one cup of the mix-flour mixture and beat well. Add softened yeast and egg. Beat well.
Add this to the remaining mix in the large bowl to make a stiff batter. Beat thoroughly until smooth. Cover and let rise in a warm place until bubbly - about 1 hour.
When batter is light, stir down and mix in fruit, nuts and peel.
Knead to blend well. Turn out on a well floured board and knead. Shape and place in a greased loaf pan. Cover with a damp cloth. Let rise in a warm place about 1-1/4 hours or until double in size.
Bake in a preheated 375ºF oven about 35 minutes. When done, brush top with hot corn syrup.
