Dundee Cake

A light fruit cake from Scotland. Rich in fruit yet light in texture. It is very popular throughout Britain.

Instructions:-
Preheat oven to 325ºF.
Lightly grease a deep 9-inch round cake pan, line bottom with waxed paper and grease again.

In a small mixer bowl, cream
1/4 cup shortening

Gradually beat in
1/3 cup granulated sugar
1 egg
Beat until light and fluffy.

Add
2 cups Basic Baking Mix
alternately with
1/2 cup dry milk.
Make 3 dry and 2 liquid additions, beating lightly after each.

Stir in:-
2 cups raisins
1/2 cup currants (optional)
3/4 cup chopped mixed peel
3/4 cup halved glaceed cherries
1/3 cup ground almonds
1 tablespoon grated orange rind
2 tablespoons flour.

Turn into prepared pan.

Bake in preheated oven for 60 to 65 minutes OR until a cake tester inserted in center comes out clean. Cool 10 minutes and remove from pan.
