Cornish Raspberry Puffs
Best when served warm, these buns have a sugary top with the raspbery jam peeping through.
Instructions:-
Preheat oven to 375ºF.
Grease a baking sheet.
Beat together;
1 egg
1/2 cup milk
1/4 cup butter, melted
Stir in a mixture of;
4 cups Basic Baking Mix
1/2 cup granulated sugar
Divide into 16 equal pieces and flatten each with the palm of the hand.
In the center of each bun place a teaspoonful of raspberry jam
Pinch edges of dough together and shape into buns, completely enclosing jam and with seam on the bottom.
Brush tops with milk
and dip in granulated sugar
Place on prepared baking sheet and cut a cross in the center.
Bake in preheated oven for 15 to 18 minutes or until golden.
Makes 16 puffs.
