Coconut Squares
The maple icing adds a Canadian touch to this recipe.
Instructions:-
Preheat oven to 350ºF.
Grease an 8-inch square pan.
Combine:-
2 cups Basic Baking Mix
1 cup lightly packed brown sugar
2/3 cup shredded coconut
1/2 cup chopped nuts.
Beat together:-
1 egg
1/3 cup milk
1 teaspoon vanilla
Add liquid to dry ingredients and stir only until moistened. Turn into prepared pan.
Bake in preheated oven for 25 to 30 minutes.
Cool in pan and cut in squares. If desired frost with Maple Icing.
Makes 16 squares.
Maple Icing
In a saucepan, combine
3 tablespoons butter
3 tablespoons milk
1/2 cup lightly packed brown sugar
Heat until sugar is dissolved.
Beat in, until creamy
1-2/3 cups icing sugar
1/4 teaspoon maple flavouring.
