Cheese Pastry Hearts
These wafer thin pastry hearts, from Austria, are sandwiched together usually with apricot jam; but some people like strawberry jam. for a sturdier flavour and colour.
Instructions:-
Preheat oven to 400ºF.
Mix together:-
2 cups Basic Baking Mix
1/4 cup granulated sugar
With a pastry blender or two knives cut in
1 package (4-ounces) cream cheese
until the consistency of corn meal.
With a fork blend in one at a time
3 to 4 tablespoons water
Use enough water to make a dough which will cling together. Roll out 1/8-inch thick on lightly floured surface. Cut out with a heart shaped cookie cutter.
Spoon strawberry or apricot jam into the center of half of the hearts. Top with remaining hearts and press together.
Bake on ungreased baking sheet in preheated oven for 8 to 10 minutes or until golden. Dust with icing sugar, if desired.
Makes 2 dozen filled cookies.
