Basic Shortcake

Ingredients:-
2 cups Basic Baking Mix
3/4 cup of cream OR 1/2 cup milk plus 1/4 cup melted butter or margarine
2 tablespoon sugar, if a sweet dough is desired.

Method:-
Preheat oven to 450ºF
Mix ingredients with a fork to make a soft dough. Beat vigorously for about 20 strokes.
Knead 8 to 10 times on a lightly floured board, to prevent sticking.
Roll dough about 1/2-inch thick. Cut with a floured 3-inch biscuit cutter.
Place on an ungreased baking sheet; bake in preheated oven for about 10 minutes or until nicely browned.
Makes about 6 shortcakes.

To serve split shortcakes through middle while still warm. Spread with butter, if desired. Spoon sweetened fruit between layers and over the top. Serve with sweetened whipped cream or even commercial sour cream.

For a Large shortcake:- Roll out dough to a circle about 8-inches round or bake in an ungreased 8-inch round cake pan. Bake about 15 to 20 minutes or until nicely browned.
Serve as for individual shortcakes.
