Basic Marinade
Meats and vegetables are marinated or soaked for added flavour. Less tender cuts of meats are also made more tender by marinating overnight. For salads, marinate cooked, chilled vegetables for about an hour.
For barbecued meats, marinate for several hours, then brush meat with marinade during barbecuing.
Combine in a jar:-
2/3 cup vegetable oil
1/3 cup tarragon or wine vinegar
1 teaspoon salt
1/2 teaspoon dry mustard
1 teaspoon sugar
Dash tabasco sauce.
Cover jar and store in refrigerator. Shake well before using.
Yield:- 1 cup.
