Crepes

"Cooking with Mickey" (this recipe is served in Disney World)

A versatile, easy crepe recipe, for breakfasts, desserts, main courses. My favourite: fresh strawberries, whipped cream, and maple syrup. No need for a crepe maker to make tasty thin crepes--just a frying pan (and maybe some practice wouldn't hurt).

2 large eggs
1/8 tsp salt
2 tbsp butter, melted
1 tsp sugar
3/4 cup flour
1 cup milk

Whisk together eggs, salt, butter and sugar. Whisk in flour and milk alternately, and beat until smooth. If desired, chill at least one hour before cooking crepes.

To cook crepes, pour about 3 tbsp batter into oiled frying pan over medium heat. Thin out the crepes by tilting/rotating the frying pan. Cook each side until lightly golden.

Makes 8 crepes.
