Almond Shortbread Jamwiches

I entered these wonderfully tasty and attractive morsels in a T-bird Cookie Contest and they took first prize! The recipe was adapted from somewhere, can't remember where exactly. The original idea of creating sandwiches from shortbread-type cookies comes from Scotland and England. These are perfect for some of those more elegant occasions (like high tea, or Valentine's Day -- use heart-shaped cutters).

1 cup butter
2/3 cup icing sugar, plus more for dusting
1/2 tsp almond extract
3/8 tsp salt
grated rind of 1 small lemon
1/3 cup almonds, finely ground
2 cups all-purpose flour
about 1/3 cup jam for the filling

Cream together butter and icing sugar. Beat in almond extract, salt, lemon rind and ground almonds. Stir in flour just until blended. Roll out to 1/4-inch thickness between sheets of waxed paper. Cut into 2-3 inch shapes with a cookie cutter. For half of the shapes cut a decorative 'hole' (with a smaller cookie cutter) to make the top halves of the sandwiches.

Place cookies on ungreased baking sheet and bake at 350 degrees Fahrenheit for 8-10 minutes or until lightly browned around the edges.

Let cool on wire rack. When cool, spread 1 tsp jam on each bottom half. Cover with the top half. Sift icing sugar over top of cookies.

Makes 12-15 jamwiches.
